The farm is two hectares in size and is located in the village of Pinares. In this case though we were able to buy it as a microlot, which means we know that the farmer’s name is Rogelio Espinoza, a second generation coffee producer, the coffee was grown at 1400 masl, and the variety of this coffee is Java. \u003c\/p\u003e\u003cp\u003eThe Java cultivar is pretty interesting. Originally brought to the island of Java straight from Ethiopia by the Dutch in the 19th century. \u003c\/p\u003e\u003cp\u003eBeing anaerobic natural the variety shines through a little less than it would if it were washed, but you will still get some Ethiopian vibes with this coffee. The extended fermentation makes it a little funky and a little tropical with notes of guava and chocolate. Made up of collected cherries from smallholders in the area. Honey process means the cherries are pulped in a way that the pulp is mostly removed but the mucilage (the layer after the pulp) stays mostly intact. Usually this means the cup profile has more sweetness than a fully washed coffee, but not the funkyness of a natural processed coffee. “Black honey” refers to the color of the parchment due to the high amount of mucilage left on the beans before drying. But, honestly, it just sounds good. “Black honey process”.. you kind of want to drink it just because of those words. That’s the magic of marketing. Rodolfo is unlike any other coffee farmer I’ve ever seen. He’s a man of many talents, dreamer and realist at the same time. Lived in Berlin, speaks Italian and dresses like he’s going to a natural wine bar, which he probably is. \u003c\/p\u003e\u003cp\u003eRodolfo inherited his family's farm which I think he sees as a blessing and burden at the same time. He wants to make something good out of his farm and the area around him, but he is surrounded by abandoned farms that make him wonder why he is still there, and not in Europe, which seems to suit him better than El Salvador. He’s always talking about starting new companies, because he doesn’t want to be dependent on his farm. (we almost got into the gelato-business with him) But it’s clear he still has a lot of love for Finca El Salvador.
